Wok pan without PFAS - what that means
A wok pan without PFAS at Cook & Pan is a wok with no PFAS, PFOA or PTFE anywhere. Not in the coating, not in the base material. Whether it is cast iron, 3-ply stainless steel or aluminium with ceramic non-stick coating - at wok heat you do not have to worry about synthetic polymers in your stir-fry or in the kitchen air. Coatings with PFAS are riskier exactly at high wok heat, so PFAS-free is extra valuable here.
What is PFAS and why choose a wok pan without PFAS?
PFAS stands for per- and polyfluoroalkyl substances, a group of synthetic chemicals used since the 1940s in non-stick coatings, water-repellent clothing and food packaging. The substance is known under names like Teflon (PTFE), GenX and PFOA. PFAS barely breaks down in the environment and accumulates in humans and animals. A wok often gets very hot; that is where coated pans give the most risk, so PFAS-free is a logical choice.
How do you make a wok pan non-stick without PFAS?
There are three ways to get non-stick performance without a synthetic coating, and we use them all:
- Cast iron - builds its own patinated non-stick layer with use and oil. Handles extreme wok heat without trouble.
- 3-ply stainless steel - no coating, no risk of wearing off. Ideal for the highest wok settings.
- Aluminium with ceramic non-stick coating - the coating is made of silicon oxide. Lighter than cast iron, nice for those who move and shake a lot.

Wok pan without PFAS on every heat source
Our PFAS-free wok pans work on every heat source: induction, gas, ceramic and electric. Cast iron and stainless steel are naturally ferromagnetic, the aluminium pans with ceramic coating have a ferromagnetic base plate baked in. Move to a different kitchen and your wok comes along.
Care without coating worries
For cast iron: dry after washing and rub lightly with oil. Stainless steel is dishwasher safe. For the ceramic coating: let the wok cool down before rinsing, use wooden or silicone spatulas and avoid steel wool. After wokking on high heat: let it cool down before washing to prevent warping.

Frequently asked questions
- Which wok pan size suits me? For 1-2 people 28 cm, for 3-4 people 30 cm, and for wok meals for the whole family 32 cm or more.
- Which oil for a wok pan without PFAS? For wokking on high heat choose an oil with a high smoke point: sunflower, grapeseed or sesame. Olive oil is less suitable for the highest settings.
- Can a wok pan without PFAS go on gas? Yes, gas and wok are a good combination. Cast iron and stainless steel handle extreme flame heat; for ceramic coating keep it on medium-high gas.
