- Material: When choosing a wok, there are two common types of materials to consider: aluminum and stainless steel (SS). Aluminum is known for its excellent heat conductivity, light weight, and ease of maintenance. Stainless steel, on the other hand, is more durable and can withstand extreme heat better, such as an open fire. In general, an aluminum wok is the most commonly used.
- With or without non-stick coating: A good non-stick coating is nice when stir-frying. Wok pans are available with and without non-stick coating. Both options are fine, but a wok pan without a non-stick coating requires a bit more maintenance, such as seasoning . If you opt for a non-stick coating, always go for ceramic.
- Size: Wokking is best done with a larger size, for example a 30 cm wok. Do you expect to wok for several people? Then a 32 cm wok is a good alternative. These are available with and without a lid .
