Then try Ingrid's Chicken Involtini! Ingrid has a lot of experience in the kitchen and always succeeds in putting the tastiest dishes on the table. She is happy to explain how to make this Italian dish of stuffed chicken with spinach and mustard. With this dish you can even serve pasta or tasty potatoes from the oven. Packed with proteins, your sports performance will also improve.
Requirements for 4 people:
- 4 large chicken breasts
- 250-300 grams of spinach. (for real rush this can also come from the freezer, we use fresh)
- 3 tablespoons mustard
- 4 tablespoons chicken stock
- 4 tablespoons of olive oil
- 4 tablespoons white wine
- about 75 grams of breadcrumbs
- 1 handful of finely chopped parsley
- some salt and freshly ground black pepper to taste
- Heat the oven to 180 degrees
- Halve each chicken horizontally to get thin slices
- Place the sliced chicken between 2 sheets of cling film and beat them thinner -> or roll out with a rolling pin
- Boil the spinach for a few minutes and then drain well
- Press excess moisture out of the spinach and finely chop it
- Stir the mustard through the spinach and divide it over the chicken breast
- Roll up the chicken fillets and secure with some skewers
- Place the chicken breasts side by side in a bowl
- Pour the stock, wine and olive oil over the chicken breasts
- Sprinkle with salt and pepper
- Mix the breadcrumbs with the parsley and sprinkle this over the chicken breasts
- Bake for about 30 minutes.
