Pasta with alfredo sauce, zucchini and roasted tomatoes.

The perfect blend of tomato and zucchini, this pasta with alfredo sauce is one of our favorite dishes to make and it’s also quick! With just a handful of ingredients and a quick prep time, dinner will be on the table in no time.

Making pasta with a frying pan

Don't get too distracted by the gorgeous Go Green pans this pasta is made with, they are gorgeous! But we'll get to that later. First the dish:

Ingredients for 4 persons

  • 400 g pasta of your choice

  • 1 onion

  • 2 cloves of garlic

  • 1 zucchini

  • 250 g cherry tomatoes

  • salt and pepper to taste

  • 500 ml almond milk

  • 5 tbsp flour

  • 2 tbsp olive oil

  • 1 bag of grated cheese

  • 1 tsp mustard

  • pine nuts

  • arugula

Preparation

  1. Cook the pasta according to the instructions on the package. Then drain and add a little olive oil to prevent sticking. Set aside until use.
  2. Cut the onion and garlic into small pieces, the courgette into cubes. Put a frying pan on the stove and heat some olive oil in it. Fry the onion and garlic briefly. After a few minutes, add the courgette and cherry tomatoes and season with salt and pepper.

  3. Cook the vegetables for 8 minutes, or until soft. Add the cooked vegetables to the pasta in the pan.
  4. Finally, make the creamy sauce. Put a saucepan on the stove and heat the almond milk with flour. Keep stirring it with a whisk to prevent lumps from forming. Add the olive oil, grated cheese and mustard to taste and cook the sauce until desired thickness.

  5. Pour the sauce over the pasta and vegetables and mix everything together. Add some salt and pepper if necessary.

    Serve the pasta in deep plates and garnish with pine nuts and rocket.
