The perfect mix of tomato and zucchini, this pasta with alfredo sauce is one of our favorite dishes to make and is also quick to prepare! With just a handful of ingredients and a fast cooking time, dinner is on the table in no time.

Making pasta with frying pan

Don’t get too distracted by the beautiful Go Green pots and pans used to make this pasta, they are stunning! But we’ll get back to that shortly. First, the dish:

Ingredients for 4 people

  • 400 g pasta of your choice
  • 1 onion
  • 2 cloves of garlic
  • 1 zucchini
  • 250 g cherry tomatoes
  • pepper and salt to taste
  • 500 ml almond milk
  • 5 tbsp flour
  • 2 tbsp olive oil
  • 1 packet grated cheese
  • 1 tsp mustard
  • pine nuts
  • arugula

Preparation

  1. Cook the pasta according to the instructions on the package. Then drain and add some olive oil to prevent sticking. Set aside until use.
  2. Chop the onion and garlic into small pieces, dice the zucchini. Heat some olive oil in a frying pan. Sauté the onion and garlic briefly. After a few minutes, add the zucchini and cherry tomatoes and season with pepper and salt.

  3. Cook the vegetables for 8 minutes, or until soft. Add the cooked vegetables to the pasta in the pan.
  4. Finally, make the creamy sauce. Heat the almond milk with flour in a saucepan. Keep stirring with a whisk to prevent lumps. Add olive oil, grated cheese, and mustard to taste and cook the sauce until it reaches the desired thickness.

  5. Pour the sauce over the pasta and vegetables and mix everything together. Add more pepper and salt if needed.

     

    Serve the pasta in deep plates and garnish with pine nuts and arugula.
