The perfect mix of tomato and zucchini, this pasta with alfredo sauce is one of our favorite dishes to make and it's ready in no time! With only a handful of ingredients and a quick preparation time, dinner is on the table in no time.

Making pasta with a frying pan

Don't be distracted by the beautiful Go Green pans with which this pasta is made, they are beautiful! But we'll get to that in a minute. First the dish:

Ingredients for 4 people

  • 400 g pasta of your choice

  • 1 onion

  • 2 cloves of garlic

  • 1 zucchini

  • 250 gr cherry tomatoes

  • pepper and salt to taste

  • 500 ml almond milk

  • 5 tbsp flour

  • 2 tbsp olive oil

  • 1 bag of grated cheese

  • 1 tsp mustard

  • pine nuts

  • arugula

Preparation

  1. Cook the pasta according to the instructions on the package. Then drain and add some olive oil to prevent sticking. Set it aside until use.
  2. Cut the onion and garlic into small pieces, the zucchini into cubes. Place a frying pan on the stove and heat some olive oil in it. Fruit the onion and look briefly. After a few minutes, add the zucchini and cherry tomatoes and season with salt and pepper.

  3. Cook the vegetables for 8 minutes, or until softened. Add the sauteed vegetables to the pasta in the pan.
  4. Finally, make the creamy sauce. Put a saucepan on the stove and heat the almond milk with flour. Keep stirring it with a whisk to prevent lumps from forming. Add the olive oil, grated cheese and mustard to taste and cook the sauce to the desired thickness.

  5. Pour the sauce over the pasta and vegetables and mix everything together. Add some salt and pepper if necessary.

    Serve the pasta in deep plates and garnish with pine nuts and arugula.
