What is a ceramic non-stick coating?

A ceramic non-stick coating is a smooth layer applied in layers inside a pot or pan. The advantage of the ceramic non-stick coating is that it is 100% healthy. Unlike other non-stick coatings that may contain PFAS, PTFE, PFOA or Teflon. The ceramic non-stick coating is made of ceramic, a healthy and natural product that is extremely smooth, which provides its fantastic non-stick properties, but can also withstand extreme heat. The Drawbacks of Ceramic pots and pans:

It is scratch-resistant, but keep sharp objects away anyway

This is where it gets a bit tricky. High-quality ceramic cookware like ours at Cook and Pan (hey, we’re pretty proud of our cookware!) is incredibly durable and scratch-resistant. Even though we say it’s scratch-resistant, it is not scratch- and cut-proof, so DO NOT scrape with steel wool or cut hard with metal knives etc!

This basically means it doesn’t scratch easily when you scrub stubborn stains or serve directly with a metal serving spoon. Yes, metal utensils like serving spoons and ladles are safe to use. Please just avoid knives and sharp objects in general, out of love for your ceramic pots and pans with non-stick coating.

Avoid big temperature differences

Do you recognize that sometimes you just want to quickly wash your pots and pans but get impatient because they’re still hot and you run cold water over them anyway? You’d better avoid that with ceramic cookware. Exposure to sudden temperature changes can cause ceramic pots and pans to expand and/or contract too quickly. This can potentially lead to slight warping. This is called thermal shock. Now our pots and pans have a thickened bottom, which reduces the chance of warping, other brands often don’t have this, so sudden temperature differences can cause warping.

What you can do is let hot ceramic pots and pans cool down before washing them in the sink. This effectively eliminates exposure to sudden temperature changes, keeping the ceramic pots and pans safe and intact.

But it also works the other way around: don’t heat too fast. The ceramic pan heats up very quickly. When you put the pan on the stove, don’t heat it directly to the maximum. The pan is cold, and heating it immediately to maximum temperature is unnecessary. Start at half power and increase gradually if needed. Never turn it up to high all at once, because this can also possibly cause warping. Again: at Cook and Pan we use thickened bottoms, which minimizes this risk. But other brands don’t always have this. So keep this in mind.

Oiling once in a while is nice

Ceramic pots and pans naturally have a ceramic non-stick coating. This usually doesn’t require maintenance, but it’s nice if you want the pan to perform optimally over the years. If you notice the non-stick coating becomes less effective over time, it’s advisable to season or oil it. Luckily, this is no big deal and easy to do. Place the ceramic pot or pan on low heat for about 30 seconds, then add one teaspoon of vegetable oil. Rub/scrub this out with a paper towel. That’s it! Your pots and pans are ready to use again. There’s no specific timeline for when you should do this; you’ll notice when it’s needed. Usually twice a year is enough, depending on use.
