What is a ceramic non-stick coating?
A ceramic non-stick coating is a smooth structure that is applied in layers to a pan or pot. The advantage of the ceramic non-stick coating is that it is 100% healthy. Unlike other non-stick coatings that contain, for example, PFAS, PFTE, PFOA, or Teflon. The ceramic non-stick coating consists of ceramic, a healthy and natural product that is extremely smooth, which accounts for its fantastic non-stick functions, but can also withstand extreme heat. The Disadvantages of Ceramic Pans:
It is scratch-resistant, but keep sharp objects away anyway
This is where it gets a little complicated. High-quality ceramic cookware like ours at Cook and Pan (hey, we're pretty proud of our cookware!) is incredibly durable and scratch-resistant. Even though we say it's scratch-resistant, it's not scratch- and cut-proof, so DO NOT scrub with steel wool or cut hard with metal knives etc!
This basically means that it won't scratch easily when you need to scrub stubborn stains or when you serve directly from it with a metal serving spoon. Yes, metal utensils such as serving spoons and ladles are safe to use. Please just skip the knives and sharp objects in general, out of love for your ceramic non-stick pans and pots.
Avoid large differences in heat
Do you recognize that sometimes you just want to wash your pans quickly, but get impatient because they are still hot and run them under cold water anyway? You'd rather avoid that with ceramic cookware. Exposure to sudden temperature changes can cause the ceramic pans to expand and/or contract too quickly. This can potentially lead to slight warping. That's called thermal shock. Now our pans are made with a thickened bottom, which reduces the chance of warping, other brands often don't have this, so a sudden difference in heat can lead to warping.
What you can do is let hot ceramic pans cool before washing them in the sink. This effectively eliminates exposure to sudden temperature changes, keeping the ceramic pans safe and intact.
But it also applies the other way around: don't heat it up too quickly. The ceramic pan heats up very quickly. When you place the pan on the stove, do not heat it directly to the maximum. The pan is cold, and heating it directly to maximum temperature is unnecessary. Start with half power and gradually increase it if necessary. Never turn it up too high at once, as this could also potentially lead to warping. Again: at Cook and Pan we use thickened bottoms, which minimizes the chance of this. But other brands don't always have this. So keep this in mind.
Oiling is nice once in a while
Ceramic pans logically have a ceramic non-stick coating. As a rule, this does not necessarily need maintenance, but it is nice if you want the pan to continue to perform optimally over the years. If you notice that the non-stick coating becomes less efficient over time, it is advisable to season or oil it. Fortunately, this is no big deal and easy to do. Place the ceramic pan or pot on low power for about 30 seconds, then add one teaspoon of vegetable oil. Then rub/scrub this out through the pan with a paper towel. That’s it! Your pans are ready to be used again. There is no specific timeline as to when you should do this, you will notice when it is necessary. Often 2 times a year is sufficient. Depending on use.
