No-Nonsense Fluffy Pancakes

Makkelijke Fluffy Pancakes

Ingredients

  • 4 eggs
  • 340 g all-purpose flour
  • 60 g cornstarch
  • 160 g sugar
  • 350 g whole milk
  • 20 g baking powder
  • 8 g salt
  • Butter or oil (for frying)

Instructions

  1. Grab a large mixing bowl. Add the eggs, flour, cornstarch, sugar, milk, baking powder, and salt all at once. Mix everything with a whisk or hand mixer until you have a smooth batter. Stop as soon as the biggest lumps are gone—a few small specks in the batter are no problem.
  2. Heat a frying pan over low to medium heat. Add a small knob of butter or a drop of oil. It's important that the pan isn't too hot, or the sugar in the batter will burn before the inside is cooked through.
  3. Spoon dollops of batter into the pan with a ladle. Give them space. Wait patiently until bubbles form on the surface and the edges start to look dry. This takes about 2 to 3 minutes.
  4. Carefully flip the pancakes with a spatula. Cook the other side for another 1 to 2 minutes until they're beautifully golden brown and fully risen.
