Ingredients
- 4 eggs
- 340 g all-purpose flour
- 60 g cornstarch
- 160 g sugar
- 350 g whole milk
- 20 g baking powder
- 8 g salt
- Butter or oil (for frying)
Instructions
- Grab a large mixing bowl. Add the eggs, flour, cornstarch, sugar, milk, baking powder, and salt all at once. Mix everything with a whisk or hand mixer until you have a smooth batter. Stop as soon as the biggest lumps are gone—a few small specks in the batter are no problem.
- Heat a frying pan over low to medium heat. Add a small knob of butter or a drop of oil. It's important that the pan isn't too hot, or the sugar in the batter will burn before the inside is cooked through.
- Spoon dollops of batter into the pan with a ladle. Give them space. Wait patiently until bubbles form on the surface and the edges start to look dry. This takes about 2 to 3 minutes.
- Carefully flip the pancakes with a spatula. Cook the other side for another 1 to 2 minutes until they're beautifully golden brown and fully risen.
