Do you know that feeling? Not having much time to cook. For example, because you need to work out or have to rush somewhere again? We can all quickly fry an egg, but it’s not very nutritious and gets boring fast. You want a real dish served that actually leaves you feeling satisfied.

Then try Ingrid’s Chicken Involtini! Ingrid has a lot of kitchen experience and always manages to put the tastiest dishes on the table. She’s happy to share them on her Instagram @wat_kookt_ingrid_vandaag where she already has many followers. She gladly explains how to make this Italian dish of stuffed chicken with spinach and mustard. You can even serve pasta or tasty oven potatoes with this dish. Packed with protein, so your sports performance will improve too.
Ingredients
Ingredients for 4 people:
- 4 large chicken breasts
- 250-300 grams spinach (if you’re really in a hurry, frozen works too, but we use fresh)
- 3 tablespoons mustard
- 4 tablespoons chicken broth
- 4 tablespoons olive oil
- 4 tablespoons white wine
- about 75 grams breadcrumbs
- 1 handful finely chopped parsley
- some salt and freshly ground black pepper to taste
Preparation
- Preheat the oven to 180 degrees
- Cut each chicken breast in half horizontally to get thin slices
- Place the sliced chicken between 2 sheets of cling film and pound thinner – or roll out with a rolling pin
- Cook the spinach for a few minutes and then drain well
- Squeeze out excess moisture from the spinach and chop finely
- Stir the mustard through the spinach and spread it over the chicken breasts
- Roll up the chicken breasts and secure with some toothpicks
- Place the chicken breasts side by side in a dish
- Pour the broth, wine and olive oil over the chicken breasts
- Sprinkle with salt and pepper
- Mix the breadcrumbs with the parsley and sprinkle over the chicken breasts
- Bake everything for about 30 minutes.
