Lamb rack consists of lamb chops that are connected. It is a delicious piece of meat that is very easy to prepare. Often, the rack is seasoned with a rub of green herbs. But what is also super tasty is to marinate the rack with pistachios, ground peppers, breadcrumbs, and French mustard. You quickly sear it in the pan and then cook the lamb rack in the oven until it is just right. Bring a classic restaurant dish to your own kitchen. Ingredients:
- 340 gr lamb rack (1 lamb rack per person)
- Ground black pepper
- 1 tbsp olive oil
- ¼ cup shelled pistachios
- ¼ cup breadcrumbs / panko
- French mustard (or mustard of choice)
- Salt
- 1 tbsp olive oil
- 3 carrots (cut lengthwise into 2 pieces each)
Preparation method:
- Preheat the oven to 200 degrees.
- Put the pistachios, breadcrumbs, a little salt, and pepper in the food processor and grind until crumbly. Add 1 tbsp olive oil and mix until everything is well combined.
- Sprinkle the lamb leg with ground pepper and salt.
- Heat a large frying pan over high heat. When the frying pan is hot enough, add enough olive oil to cover the bottom of the pan (3 tbsp oil).
- Add the lamb to the pan and fry for about 3 minutes on each side until browned.
- Transfer the lamb to a medium casserole pot or oven dish, with the fatty side up (where most of the meat is). Spread some mustard over the top part of the meat and then pat the pistachio and breadcrumb mixture over the mustard layer on the lamb.
- Roast the lamb for about 20-25 minutes, medium-rare.
- While roasting the lamb in the oven, cut and prepare the roasted carrots and asparagus. (Cook the asparagus first according to the instructions.)
- Roast the vegetables in a large frying pan with some olive oil until the vegetables are nicely colored.
- When the lamb rack is ready, cut the lamb into chops, each with 2 ribs, to serve.
You can optionally choose a nice sauce of your choice!
